got extra sauce from that lasagna? or sunday dinner? use it to make one of my FAVE breakfasts– HUEVOS EN EL PURGATORIO. which really translates to EGGS IN PURGATORY– but its just (damn) delicious eggs poached in tomato sauce! You can do this with any tomato based sauce, meat, marinara, go nuts! i topped it with some mozzarella cheese but the variations are endless!

cook your eggs in some SAUCE~!!

so sandy–the storm was on her way and so i thought: lemme get that LASAGNA please.
so i looked up this bad-ass recipe and went with it!!! how can the world’s best lasagna be bad…and it sho wasn’t! I had never made it before and now im gonna make it often! Bon apetit!!!

118. La La La Lemon Bars!

So last night my lil big bro nicko needed a treat, something sweet! Of all the desserts ever….his fave is lemon bars!
Luckily they are EASY and AWESOME.
I used this RECIPE and used margarine instead of butter since all they had at the deli near my house was salted butter lol.
They came out great tho! I would add even more LEMON though, and next time I’m gonna add the zest of one lemon and the juice of 2!

117. summer salads with a crunch!

My lovely and awesomely health conscious friend Stefanie made this incredible salad and I had to share it!
It’s made up of delicous spring greens with lemony grilled chicken, an entire peach sliced up, roasted pine nuts and little bits of goat cheese/chevre on top. I drizzled a little olive oil and garlic vinaigrette over top and I have to say it was one of the best combinations of flavors ever! I am definitely making this one again! Thanks Stefanie!
